If you plan to eat it, and I hope you do, the first thing you have to do is clean it. It has been a long time since I cleaned a fish and there are different methods. In the method I am describing, the first thing you do is cut the head off with a filet or other sharp knife. Next, scrape off the scales by running your knife along each side until all the scales are off. Next, lay the fish on one side and very carefully cut the meat away from the bones. If I remember correctly, it is best to start at the tail end right above the tail. Do the same on the other side. Though you should have filets that are bone-free using this method, always be careful when you eat the fish because it is possible that you missed some of the bones.
