Grout is very porous, and will stain fairly easily. Anything that can stain can be recolored.
Getting the color deep enough or getting the shade right will be very difficult, but it could be done. Stop by a paint store or a home center & find someone with enough gray hair to know how to match colors without the computer & ask them.
Try whatever remedy you come up with under the fridge or stove & make sure you like what you get.
As for damaging the tile, ceramic & porcelain are basically glass & you can get very aggressive with removing any oops or boo boo's. This will turn into a job you will wish you had never started but you did ask.
Another possibility is to have an installer regrout for you. Lots more money but more permanent results.

The veneer, boards are referred to as engineered, since they are man made and built for a specific purpose, like flooring.
Engineered wood is actually harder, stronger & much more stable than the same thickness of solid wood. It can also be glued down in areas where nailing is not possible like slab floors & basements.
Engineered wood also resists swelling & bowing, because the layers are rotated in different directions as the boards are laid up before they are heated & pressed together.
Environmentally the engineered wood uses less wood & the veneering process leaves almost no wasted wood and no sawdust.
Once its on the floor even most experts cant tell the difference & the price is about the same for a good solid or a top of the line engineered.
Save the money, the swelling & cracking and the forest & go with the engineered if you find a color or style that you like.

Do you have to remove old linoleum before putting down new vinyl tiles?
What is under the linoleum? If it is stuck down well, you can put new tiles on there once. However, if you get to "the bottom of things," you may be able to fill in any dips in the floor and correct any other issues that will make your vinyl tiles look even better. It will take elbow grease and a crowbar and some major adhesive remover to take off the linoleum, but it can be done.
If you choose to tile over the linoleum, make sure it is super clean and free of any grease.

Run a short ad in Craigslist, that will likely get you someone hungry & maybe unlicensed so you will know the cheapest price.

That will be the highest price in the market
Now you would have a good range & then its time to look for quality & references... a steal on tile or a great price on labor, can be VERY COSTLY if you give the job to a butcher..
My bet will be you will find someone on the low end at about $2 per sq ft & that the depot will be $6-8 bucks a foot after they do all the add ins...

You can use thin-set on the wall, just like the floor. The trowel size is different though. A latex modified thin-set with 3/16 x 5/32 V - notch trowel is most common for tile up to 12" on the wall.
