Can you use gluten free flour instead of self raising flour?

Technically all flour has gluten in it. Gluten is a protein found in food processed from wheat and other related species.

Different kinds of flours have different levels of gluten (bread flour has high gluten vs. cake flour with low gluten).

Self-rising flour is all-purpose flour with salt and some kind of leavening agent.

So yes, self-rising flour, like all flour has gluten in it. It just doesn't have special amount added or taken away like bread or cake flour does. It has same gluten content as all-purpose flour.

Why go gluten free?

I don't know if anyone prefers a gluten-free diet (the majority of people on a GF diet would love to be able to eat gluten/wheat - ie. pizza, bread, seems like almost everything, etc). I prefer a gluten free diet because it doesn't hurt me and damage my intestines when I eat it. :)

However! One major advantage that I have found is that, in being forced to read labels VERY closely for traces of gluten, you really get a sense of what that product is made of. I have stopped eating a lot of foods, even foods without gluten in them, because when reading the label the majority of the ingredients were chemicals I couldn't pronounce.

Plus - to be completely safe, it requires cooking from scratch using fresh ingredients that you know are not contaminated, so the food does taste better (if you can cook!). I'd still prefer to be able to enjoy the same meals at the same restaurants and parties as my friends though.

Does bleach have gluten in it?

Bleach is a type of thing rather than a specific thing. Whether any given kind of bleach contains gluten or not depends on what it is.

That said... I don't know of any bleach that contains gluten, nor can I imagine why it would be a concern. Are you planning to commit suicide by drinking bleach, but don't want to trigger your wheat allergy?

Perhaps instead of "bleach" you meant "bleached wheat flour". Yes, that contains gluten.

Yes, I do believe so, I came here looking for this answer myself and after a bit more research I discovered this link:

http:/www.coeliac.com.au/gluten-free-diet-information.html

it states on there that maize is gluten free.

Maize, i.e. corn, is gluten free, but maize flour, i.e. corn flour or corn meal might not be. Wheat flour is commonly added to corn flour and corn meal to enhance its binding quality for baking. Be sure to check the package to ensure that it says "Gluten-free." If it does not say that, check the ingredients to see if any wheat or wheat by-products have been added.
