If you have the applications already in iTunes, then when you plug in your iPod there will be a tab called Applications. Maybe sure the ones that you want on your iPod are checked to be transferred.

on any ipod you can find the number technical stuff if you're on itunes and you click the name you've given your ipod. a screen will come up with a picture of the ip[od you have and what you are looking for will be there.
