Booting directly into W7 will have FULL hardwareaccess when using any application. Exactly as if it was a Windows computer.
When you use a VM Windows shares the hardware with the VM software and the background task's of the Mac. Because of that some higher end applications can't use the processor or Ram to the fullest and could run slow or barely at all.
If you use Windows semi regular for lighter duty stuff like word processing or similar then having both is the best. With the VM you don't need to boot directly into Windows every time you want to just open a Windows document or something real quick and you can fully boot into Windows when you need the full power of the hardware for higher end games, video editing, etc.
Parallels can use the full Boot Camp W7 install as it's VM and I believe VMWare can also.
Most people have had good luck using medium powered games and applications in a VM, just look at their web sites and forums to see if the applications you use are working well or not.
