Granted I have a sampling of only a handful of people, and this was not by any means a scientific test and the side effects I note could be related to other ingredients.

Test foods: Chips, Beef snacks, general food with MSG powder added

Possible side effects so far:

Bad breath

Weird aftertaste

Dry/sore throat (starting and lasting through the next day)

More offensive bowels (You can add MSG to hunting dogs' food to make them stop eating their own)

Nothing (from my sample of ~10 people, only two volunteered any side effect)

MSG can make some people sick. For me I've always gotten much worse symptoms than feeling sick. If I accidentally consume something with even tiny amounts of free glutamate(active part of MSG) I become almost completely mentally incapacitated for days. My memory will be terrible. I'll be surprised I have a cat, for example. This is not just a little temporary brain fog; it is causing some permanent damage to my brain as well. It's a matter of sensitivity which can be caused by several factors such as low blood sugar, magnesium deficiency and a damaged blood brain barrier. The safe amount is different for everyone and it's not even known what the unsafe threshold is for anyone because damage of a smaller degree may not cause noticeable symptoms immediately but after several years of consumption have an accumulative effect that could cause decreased mental and memory capacity later.

MSG (monosodium glutamate) doesn't need to be replaced. It's official purpose is as a flavoring. It's closest similar flavoring is salt. We are told salt is bad for us and MSG is harmless. Nothing could be further from the truth.

MSG is addictive, causes chemically induced hunger, hyperinsulinemia, hypothyroidism, weight gain. It causes many people to have migraine headaches and photophobia (sensitivity to light).

The best salt to use is Celtic Sea Salt. It still has all of the trace minerals attached. Table salt is pure sodium chloride and isn't very good for us. People report lowering their blood pressure by using Celtic Sea Salt. Most sea salt sold in stores is devitalized.
