Well that isn't very nice and yes you can freeze for up to 2 months get as much air as possible out of the bag or wrap in plastic wrap and then put in a freezer bag. Works great.

In a wood fired pizza oven why does the mozzarella cheese burn?
I have been cooking pizza in a wood burning brick oven for several years and do not have a problem with the cheese burning and I cook at 800-900 degrees. However I only use fresh mozzarella packed in a brine or water solution. If you have been using low moisture cheese this may be your problem. Fresh mozzarella is more expensive but well worth it.
