Chemically casting sugar or castor sugar is just another name for regular sugar (sucrose). It gets its name (in Britain) as it is fine enough to be sprinkled from a sugar "caster" or sprinkler. Like all specialized ingredients in cooking it has a purpose:

  • because of its fineness, it dissolves more quickly than regular white sugar
  • it is especially useful in making meringues and sweetening cold liquids.

Can you make blue berry pies with out a pie top?

Yes, instead of a crust top you can make a crumb/streusel topping, which may consist of flour, butter, sugar, with optional ground nuts or spices such as cinnamon or nutmeg.

If you make a fruit pie with no topping at all, the fruit on top dries out and becomes rubbery so you need some type of top. The streusel described above is easy and tastes good or a latice crust which isn't as much dough but still protects the top of the cake.
