There are many theories about who "Valentine" was.
One story that it started with the sainthood of a priest named Valentine who lived in the third century. He stood up to the emperor in his decree that soldiers had to remain single. When exposed, Valentine was put to death.
Another story says that he may have been killed because he helped Christians escape from prison.
However, it was often the case by the Catholic Church to incorporate local traditions of pagans into Catholic ones in order to get them to join the Catholic church.
This may have been the case because the pagan celebration of "Lupercalia" occurred in the middle of February (which was a fertility festival to the false god Faunus). Fertility was the main goal of this festival. Lupercalia was deemed "un-Christian" by the end of the 5th century (around 496 AD) when February 14th was declared as Valentines day by Pope Gelasius.
