It is the bride's choice Really. I personally WOULD wear a black dress to my own wedding. It really doesn't matter what kind of dress you wear. but you also have to be careful with the people you invite. because they might think it is disrespectful. Usually brides go for the cream or white color dresses but it honestly is YOUR choice. But if people do criticize you just say "It is my wedding my dress so i can wear what i want!"(i personally would say that.) But dont let those people ruin your wedding day just because they said something.

Before you complete and email/send any correspondance you need to make sure that you cover every single point and be very clear about what you want and don't want. The more correspondence you have the more likely there will be mistakes. If emailing always include the original email with your response. Always make sure that you get confirmation of all changes and all decisions.
Nearer the time reconfirm everything. Try to build a good rapport with the venue owners and other suppliers that you've hired and then make sure that they will be working on your wedding day.
You could try to hire a wedding planner in the area, who will step in a week or two before your wedding day (if you will still be away from the area) and reconfirm and visit your venue and suppliers to make sure that it is exactly as you have planned.

The reason 'the guy proposes' and 'it just seems right' is because....well, society has made it a norm for guys to propose. There is nothing inherently 'odd' about the idea of a woman asking a man to marry.
Society continues to lay characteristics/model actions onto people depending on their sex, and the first guy to answer is the type of ignorant person that doesn't notice this, and defends the existing norms without having a clue as to why.

Because cream is very close the white, worn by the bride. The thinking is that no one should upstage the bride. She is the queen for the day so don't do anything that might interfere with that. A cream dress could compete with the bride or take some attention away from her. Not sure if I agree or disagree, but that's the reasoning behind it.
