I would check out wolframalpha.com to see the specs for yourself. Its a website designed for advanced math calculations and all things numbers, and oddly enough they have impressive breakdowns of a lot of foods nutrition. Just search the foods and a measurement (like cup or grams)
A plantain vs a russet potato:
-For every weighted unit of plantain, the potato will have fewer calories.
-Plantains also have a ton of sugar in them compared to a russet potato
-the potato has higher sodium levels.
-plantain lacks in protein compared to potato
-plantain also has more carbs than potato
The rest of the nutrition goes back and forth, so things like vitamins and minerals will differ some. In my opinion, plantains taste amazing compared to potato, but looking at the stats, russet potato wins in nutrition in general. However you might want to check other types of potatoes and see how they stack up.

A process called oxidation, starts. and it basically lets ethylene out of the fruit. The more ethylene that a fruit releases the more it ripens. The ethylene produces a gas called amylase which breaks down the starch in the bananas (starch is hard), and turns it into sugar, ( makes it soft.). Amylase then makes an enzyme that is called pectinase, which breaks down the cell walls of the banana (making it softer).
