if you make a baking soda solution(by mixing water with it), and using a cotton bud(which is dipped from the solution), you will have to write a message or text on a sheet of paper and then wait till it dries. Now take a slice of beetroot and rub it over the paper smoothly. The result is that the message will appear white after some 12 hours unlike how it was when you first rubed the slice over it. This can be considered as the reaction of baking soda solution with beetroot. Concerning the reaction between beetroot and plain baking soda, there is no reaction to happen.

Actually, It can't be classified as any of them.

Acid is any substance which furnishes H+ or Hydronium(H3O+) in water.

A base is a substance which furnishes OH- in water and alkali is a water soluble base.

But a beetroot won't do any of them. It would simply get swelled up due to absorption of water without affecting it.
