The quality may be OK, but the level of components is rather low. 2x7 drivetrain is pretty dated, and won't make any sense upgrading. It also has a freewheel, as opposed to the more modern freehub design. Not to be recommended for a heavier rider.

Race bikes usually only have a rear brake and bikes for vert/street usually haven't got any brakes at all. Dual brakes is sensible on a bike that sees some utility use, like being ridden on roads, but removing the brake will (to some) make the bike look more "hard core", or "cooler". And, if you haven't got a rotor/gyro, removing the front brake will let you do barspins w/o the brake cable getting tangled up.

You'll also need a set of clamps and brackets for the shifter cable. You're probably restricted to an internally geared hub, as externally geared hubs pretty much require a frame that's built to take them from the beginning.

Don't really know what you mean by a trick bike. But generally kids bikes tend to be rather crappy. Kids will outgrow their bikes fairly fast, which makes the parents unwilling to spend money on them. As a result, they're often heavy, with poor parts poorly put together.
For a trick bike you'll want something lighter, stronger and more suited to hard riding.
And as bike parts are least expensive when bought as a complete bike it doesn't make sense money-wise to spend a lot of money on a complete bike make over. Better then just go for a new bike.

Most race type dirt bikes do not have kick stands because it sticks down below the frame and will be damaged or ripped off the first time the skid plate hits a rock or log.
To install one:
Get one from a wreck or the dealer. You will most likely have to weld the mounting tab to the frame and then bolt it on and attach the hold up spring.
Most grips are just rubber sleeves that are slid onto the bars. While this is fine for most riders, some have issues with grips sliding or twisting.
For those riders there are lock-on grips which come together with two metal collars for each grip. The collars go around the grip and squeezes it against the bar, hopefully keeping it in place no matter what the rider decides to do.

If it's a BMX rotor may be another name for gyro / detangler - the thingy that lets you spin the bars on a brake-equipped bike w/o making a mess of the brake wires.
