By floating we can do many different kinds of cleanup processes.
The problem with oil is that some oils are more dense than water (bunker, heavy industrial ful oils, some crudes) these sink or at least bib along just under the surface of the water. and avoid separation. The other problem is that oils (including the lighter oils) tend to get mixed with water (emulsify) due to wave action and debris forming wahat is knows as mousse. This mixture again is close to the density of water.

The term "tripping the well" got it's start most likely as a reference to the "round trip" made by the drill bit. The first leg of the trip is coming out of the hole, by lifting the entire drill string and unscrewing the upper most drill pipe called a joint, the newly removed drill pipe is laid beside the rig and the drill string is lifted again, etc. until all drill pipe is out of the hole. After service work is performed, for example change to fresh drill bit, then the second leg of the trip is to reverse the process, lowering the drill string as each new joint is made until fully back in the hole with the bit on bottom. You are correct- they can and they are doing it!
The choke and kill lines running off the side of the BOP can be used to produce the oil. BP is actively implementing the "Q4000 Direct Connect" option. Haven't a clue as to how much would flow from these lines.
The oil will go into the Helix Q4000 vessel, and will have to be offloaded. See details from BP in their video presentation. They said on May 31 that it will take about 2 weeks to implement.

What gases are released from the spill?
Natural gas coming out of the well is mostly methane and ethane. There may be propane and butane given off in lesser amounts. These chemicals do not generally pose a health problems. The most harmful component in natural gas is hydrogen sulfide. It appears that the Macondo well is not producing hydrogen sulfide, or at least not at levels considered harmful to health.
However, as indicated on the link, the EPA is concerned about gases that can be given off as a result of the evaporation of the oil spill and the dispersants that have been added to the oil spill. These compounds, generally grouped as Volatile Organic Compounds (VOC), include benzene, and can be harmful in small quantities.

Boats are sent out to skim oil from the surface of the water. Oil floats, so a large portion of the issue is this floating oil. Secondly, oil that makes it to the beaches must be manually picked up and wiped from the object it is coating. Animal life needs to be bathed and scrubbed of this oil. Time will help the issue too.
Nature has always made oil slicks and leaked oil into rivers, streams and ocean currents. Nature can survive these smaller attacks with oil. The larger spilling, such as the Exxon Valdez and both Gulf spills take more effort then nature can produce by herself.

Prior to drilling an exploration well. calculations are made to determine in required volume of hydrocarbons (oil and gas) to justify development. The gross volume is determined by the area (acreage) multiplied by the average oil column thickness.
The equation to calculate the volume of oil is N = C x Gross Volume x Porosity X Oil Saturation/ Bo, where C is a conversion constant and Bo is a Formation volume factor to account for the shrinkage of oil from reservoir to surface conditions. When the gross volume is in units of acre-ft, then C = 7758.
Generally, the more expensive the development costs, the more oil an exploration well needs to discover to justify development.
In developing a field, it is common to use a 40 acre at least initially. Offshore, well spacing is generally much larger, commonly 100 to 160 acres. There are notable exceptions, particularly in the early stages of development where the spacing may be much higher.

The Exxon Valdez oil spill resulted in 0.26 million barrels of oil (abbreviated Gbbls) and the Deepwater Horizon spill was 4.9 million barrels, so the BP spill was 4.64 million barrels larger. One barrel equals 42 gallons.
However, controversy surrounds both estimates. I was surprised how big a range various groups have estimated the Exxon Valdez oil spill volume. The number of 0.26 Gbbls came from Wikipedia. They also give a higher estimate considered by some of 0.75 Gbbls. The estimates do become a bit confusing as they are given in cubic meters, gallons and barrels. Please see the side bar to the right of first link for these estimates in barrels.
The estimate of the oil spilled in the BP oil spill comes from a Technical Task force, and is likely to be contested if BP is sued by the US government. When oil is flowing from a blown out well, accurate estimates are very difficult. The Task Force assumed that the oil rate began at a high rate, and then became less as the reservoir pressure declined. Reservoir pressure is important as it is the force driving the oil up the well. BP has suggested that just the opposite may be true.
