They try to make the instruments "fit" a person the best possible way so that it isn't a problem to hold/play them.

Notes or pitches rely upon sound waves. To change pitch you change the length of the sound wave. The valve trombone uses valves to chnages the course of the air producing the sound wave to lengthen it or shorten it. The slide trombone does this by moving the slide up or down.
