Why aren't cereals stirred during cooking?
The goal in cooking cereal is to prepare a product that is tender, but not sticky, that is free of uncooked lumps of starch, and that has a pleasant flavor. When cereal is milled, grains are fractured and starch granules are exposed on the surfaces of individual grain. If the cereal are agitated during cooking, these starch granules are dislodged, thickening the liquid around the starch grains. The result is a gooey consistency, which many find unpalatable. Therefore, stirring should be kept to a minimum when cooking cereal grains.

No, they are not deep fried, they are steam pressure cooked for an hour to soften, then they go through dryers for many hours to reduce moisture. They are then pressed beneath large rollers to become flat. The flakes then get tumble toasted in a rotating oven for 30 seconds. And finally they're sprayed with flavors and vitamins and all that good stuff and packaged. Hope this helped!

Why does your blood sugar rise after eating Raisin Bran cereals?
Check both the sugar continent and total carbohydrates on the box. Different brands will vary in their composition (and maybe added sugar too). There is plenty of concentrated sugar in the rasins alone! As with all cerals, ALL of the contents have been concentrated from their original forms and/or stripped out from their original form (Grapes to Raisins, Wheat to Bran). That said, Rasin bran is a better choice than most boxed cereals on the market. The removal of moisture and other 'good and natural' ingredients make these concentrated forms more digestable (and at a faster rate) than just sticking to wheat and grapes (Likely tastier too!). Everything you eat, that is metabolized, either turns into sugar or is stored as fat.
