I used a metal ramekin (you could use glass too) and put the mozzarella cheese inside. Then fill a sauce pan with a small amount of water and put the ramekin in the water (not enough water to make the ramekin float). Heat the water carefully (don't leave it unattended) until the cheese melts. Try to stir the cheese while heating, but be careful not to let the steam or metal burn you. I used a chop stick. :) Worked great and I poured it on chicken enchiladas!
