  • First, if you haven't mixed in the cinnamon yet, gently spoon out any clumps.
  • Now, start by adding balsamic vinegar -- up to a tablespoon per quart of chili. The acidity will counteract the cinnamon nicely.
  • If that's not enough, add up to a tablespoon of lime juice -- you may need to repeat these steps depending how much cinnamon there is.
  • Add some water and tomato paste to further balance out the flavors; you will probably need more chili powder and other seasoning to taste.
  • Rejoice! Your chili's flavor has gone from overpowering to wonderful!
