Why do some people not believe in the resurrection of Jesus?
In the earliest manuscripts of Mark's Gospel, there was no mention of any appearances of the resurrected Jesus. The Gospel finished at verse 16:8, with the women fleeing in fear and telling no one that the tomb was empty. What is called the "Long Ending" (there was also a "Short Ending") was added much later by an interpolator.
Scholars now know that the authors of the other New Testament gospels relied on Mark's Gospel for everything they knew about the life and mission of Jesus. Yet each one described the risen Jesus as meeting the disciples at different times and places, with remarkably little consistency. It strains belief that evangelists knew nothing about the life of Jesus before his resurrection, copying what the knew from Mark, yet could tell us in detail about the resurrected Jesus. And it strains belief even more, that each account differs fundamentally from the others, yet all are true.
People who do not believe in the resurrection of Jesus do so because there is no credible evidence that it really happened.

Then Jesus was crucified and rose from the dead three days later. the story may seem far fetched to you, but there were at least 500 witnesses that saw Him after he rose from the dead. You can say that maybe he was not really dead but the Bible says that he did`t even look human because he was all bloody and all the flesh was peeled off his body.

The New Testament doesn't contain the statement, "You can eat pork." However, it does teach that all distinctions between "clean" and "unclean" foods were done away with. Some pertinent references:
Mark 7:18, 19 - So He [Jesus] said to them, "Are you thus without understanding also? Do you not perceive that whatever enters a man from outside cannot defile him, because it does not enter his heart but his stomach, and is eliminated, thus purifying all foods?"
Also see the account of Peter's vision in Acts 10:9-16, noting what he was told in verse 15: "What God has cleansed you must not call common."
And in 1 Timothy 4:1-3, Paul refers to the requirement to "abstain from foods which God created to be received with thanksgiving by those who believe and know the truth" as a "doctrine of demons," then writes in verse 4 and 5: For every creature of God is good, and nothing is to be refused if it is received with thanksgiving; for it is sanctified by the word of God and prayer.

In Acts 10 (the most common scripture used as an excuse to eat pork) Peter travels to meet Cornelius. On his way he stops on a housetop to pray. He became very hungry and would have eaten but fell into a trance. He sees a vision of all sorts of animals and wild beasts creepy crawlies, etc. God tells him "Rise, Peter, kill, and eat" Peter says he has never eaten anything common or unclean. God basically gives permission to eat food of the gentiles "common". (What God has cleansed, that call not thou common) God never made reference in this passage to Peter's statement of unclean (which would be pigs and other animals with split hooves)... He never said He blessed unclean. He blessed common. Also, it goes on around verse 28 to say that it was unlawful for a Jew to keep company or come unto one of another nation and the vision was God's way of showing Peter that he should not call any man common or unclean. It was in reference to Peter being a Jew and his travels and company in the land of the gentiles. The vision had absolutely nothing to do with pork. Sorry to disappoint.
