My guess is that penicillin is a fungus that replaces vital building blocks in the bacteria walls, causing the bacteria to basically fall apart and be consumed by our immune system, that is his it fights bacteria infections, now cheese is the culmination of milk and bacteria (or at its most basic, cheese is virtually just off milk).
