MAKE SURE LEMON FILLING IS AT ROOM TEMP BEFORE STARTING MERIGUNE.
whip egg whites, adding very fine sugar (castor sugar) or sift sugar.
TEST to make sure sugar has dissolved by rubbing but of merigune mixture between your fingers
when spreading the merigune onto the pie, take it all the way to the edge.
There are some other tricks like adding a small amount of cornflour etc to the merigune mixture and spreading a very fine amount of pastry crumbs on the lemon mixture prior to topping with merigune
Dont over bake merigune, cool in the oven.
