You would use the cook time for the individual loin as it accounts for the size and thickness of the cut of meat. As long as you maintain the proper temp as recommended for your smoker the cooking time will be the same for multiple loins as it would be for a single loin.

Has anyone else noticed a difference in the texture of pork chops recently?

Yes! I'm so happy to see that someone else noticed the change. They have more of a smooth, rubbery texture now. I pan fry my pork loin rib chops, and have been disappointed with the results for a while now. And this is after trying name brand (Farmer John) and store brands. The flavor is fine, but I just can't get past the texture. Used to be one of my favorite meals. I wonder if there's something going on with preservatives, or how the pigs are being raised/fed?
