This is basically because iodine forms a polypeptide complex with starch, resulting in the dark blue solution.
The amylose, or straight chain portion of starch, forms helices where iodine molecules assemble, forming a dark blue/black color.
The amylopectin, or branched portion of starch, forms much shorter helices and iodine molecules are unable to assemble, leading the color to be of an orange/yellow hue. As starch is broken down or hydrolyzed into smaller carbohydrate units, the blue-black color is not produced.

How do you keep mashed potatoes from getting stringy?
When I make my mashed potatoes, I make sure they're cooked enough that you can break them apart with a fork in the pot, without them turning to mush on their own. You then add butter/margarine and milk. I don't have any exact measurements for you as I generally eyeball it. But if you've never done it before, I suggest you start with a little milk and just add a few drops at a time. Mix it well between each addition. You know you have enough when it takes on a creamy consistency.
And don't forget: As the cook, it is always your right to taste everything as you're making it to make sure it turns out the way you want it to!
P.S. To my knowledge, there's no limit to how much butter you want to put it, as it's mostly to taste anyway.

Actually, it takes more preparation to grow them indoors. With a drill, or hammer and a large nail, puncture several drain holes in the bottom of a 5-gallon bucket. You should have a large pot or tray to set the bucket in, to catch any drainage during watering. Add soil to the bucket until it is about three fourths of the way full. Cut the eyes from the potatoes, leaving about a half inch piece of potato surrounding the eye. Plant one eye per 5-gallon bucket about an inch deep and keep the soil moist in a sunny area. When the potato bush grows to about 5 or 6 inches tall, you will add a little more soil to create a hill. You may need to do this again as it grows taller and bushier. You should have potatoes underground within 3 or 4 months. Outdoors, we know when it is time to harvest because the ground will crack. I'm not sure the soil will actually crack indoors because it may be too moist. You can also purchase potato sacks made just for growing potatoes in.
