Why are star seeds important to Galaxia in sailor moon?

In the anime, Sailor Galaxia fought during the Sailor Wars against Chaos, and in order to save the galaxy, sealed Chaos within herself. The presence of Chaos within her began corrupting her, though, so in order to protect it, she sent it out of her body to somewhere in the Galaxy where it would be taken care of. This Star Seed took the form of Chibi Chibi, and later Sailor Chibi Chibi.

In the manga, Sailor Galaxia had a more "evil" beginning--she was born on a planet she regarded as "trash," and roamed the Galaxy, seeking the ultimate power. She encountered a hooded individual (with more than a passing resemblance to Wiseman/Death Phantom--a form of Chaos, and one that Galaxia was aware was one of the most powerful in the galaxy) that told her of the Sagittarius Zero Star, the birthplace of all stars in the galaxy (and the center of the galaxy). Galaxia ended up setting up her base of operations there, at the Galaxy Cauldron, and recruiting minions to help her acquire more and more Star Seeds. Those who killed "true" Sailor Senshi (with genuine Star Seeds, also known as Sailor Crystals) could gain the powers of the defeated Senshi by utilizing bracelets given to them by Galaxia. A "true" Senshi who gave up her Sailor Crystal could also survive in a physical form with the use of these bracelets.

If Sailor Galaxia succeeded in making Sailor Moon distraught, she would become vulnerable to Chaos. If Sailor Moon was overtaken by Chaos, the two immense powers would cancel each other out and destroy one another, leaving Galaxia to get their Sailor Crystals and then become the strongest Sailor Senshi in the galaxy.

In the anime, they are not clear as to when Usagi and Mamoru (Serena and Darien) got married. The last episode ends with the two of them right after the final battle, kissing, and it is clear that they marry in the future. However, there is no specific episode in which they marry.

In the manga, though, on the last pages of the final book, Mamoru proposes to Usagi and they are shown getting married.

She transforms into Eternal Sailor Moon (the version with the angel wings) in the second episode of Sailor Stars. The episode name I believe is something along the lines of "Saturn's Awakening! The Ten Sailor Senshi Gather". The episode number I think is 168.

If you're talking about the episode where she turns into a full angel to defeat Sailor Chaos, then that would be episode 200.

Are any of the sailor moon scouts lesbian?

Not technically, no. Series creator Naoko Takeuchi has said in interviews that only girls/women can be Sailor Scouts [Senshi in the original Japanese], and that she herself was surprised when the animators of the fifth and final season chose to make the Sailor Starlights gender-changing Senshi, that start out as males and become females when they transform.

However, it was implied in the anime that the male gender that Taiki Kou, Seiya Kou, and Yaten Kou each possessed as humans was in fact just a "disguised," based off the comment that Princess Kakyuu made upon meeting them once more.

There is also no problem with a Senshi cross dressing, which is what the Sailor Starlights did in the original manga (no one recognized them as females, even though that's what they were, all the time), and as Amara [Haruka] Ten'ou (Sailor Uranus) did while infiltrating Infinity Academy in season 3 (Sailor Moon Super).

It has been said that Darien [Mamoru] possesses the Sailor Crystal of the Earth, but he doesn't transform the way the Sailor Senshi do, though he does "transform" into Tuxedo Mask and Prince Endymion.

Serena (Usagi in the original Japanese episodes of Sailor Moon) defeats Alan and Ann (Ail and An) in episode 53 (59 in the original Japanese). Well actually, she didn't defeat them; as Alan and Ann relentlessly attacked the Sailor Scouts, the tree attacked them, and knocked Alan down. Ann moved to shield him, but got stabbed by a tree root instead. The tree ceased its attack and started speaking, revealing its origins and eventually allowing Sailor Moon to purify it.
