I take 3 sticks of butter, 3 cups chopped celery and 1- 1/2-2 cups chopped onion saute together until veg's are soft. add salt and one whole jar spice island poultry seasoning. let cool and spoon mixture into bread mixing up each spoonful. Stuff turkey cavity and neck tight. secure neck flap with skewer. place an apple in rear to keep in stuffing. oil bird (I like butterball or any young turkey)season with poulty seasoning salt and pepper. place in double disposable aluminum pan. add 2 cups of water cover with heavy duty aluminum foil tented up off top of turkey breast. put in oven at 11:30-12 midnight at 175 degrees. remove foil at 6:30 am turn off oven. remove 30 minutes later. remove turkey from pan. scoop out dressing from both ends and put in warm oven until ready to eat. We eat at 4:00 pm.
