Also the cost of sharp cheddar is more because of the extra costs of production, the smaller yield compared to the mild cheese due to more liquid evaporation. Also the sharp cheddar is actually aged so there has to be aging storage facilities and they cost money to build and maintain. So as you may notice in your local grocery stores the cost of mild might only be about 60 percent of the cost of sharp cheddar from the same producer. I for one enjoy cheddars that are aged they become so creamy even though they are a harder cheese. The extra cost is far offset by the increase in flavor and quality.
