The development in the 19th century of the steam trawler and refrigeration opened up the fish rich Icelandic waters to British fishermen and made fish even cheaper. Fish and chips became for the British their first convenience/take away food. It is worth noting that so popular was fish and chips and so important to working people's morale that throughout the second world war fish and chips was never subject to rationing unlike other foods.

Apart from that we like fish and chips because they taste good. Sadly they become more and more expensive as fish stocks decline and compared to my childhood in the 1950's the fish get smaller. Or maybe that I have got bigger!

However, the vinegar (acetic acid) is applied to the chips in a crystalline, powdered form -- so the salt and vinegar do not combine there. Only after contacting liquid (such as saliva) can the compounds combine. Therefore, technically, the only acid that is on salt and vinegar crisps, or chips, is the crystalline form of vinegar.

Still, in crystalline form, the acetic acid is very potent. Eating a large number of chips without drinking something or wiping one's mouth can be damaging to the mouth and lips. Otherwise, they are quite harmless and tasty.

Potato chips do not require refrigeration and they won't last any longer if you do refrigerate them - they will still get stale - but they would last longer if you freeze them. Although why you want to keep your potato chips for such a long period of time, I don't know.
