When you write a story about a topic you know your story is believable, authentic and authoritative. I use a lot of health and medical things in my stories because I know about them. I do not use topics I don't know about because I would look like a fool when I wrote down incorrect things. When you do a thorough research and get help from experts you can use topics you have little knowledge about. The experts can read your story and correct you in areas you blundered over. It is just easier to stick to things you know so the reader can understand everything in the story.
Here is a clarification on this matter. When you write a plot it does not need to be "about" your specialty point of knowledge. In one of my novels I have one of the characters be a doctor who must help an injured person but the plot is about World War 2 evaders and their return to Pearl Harbor after crashing in Japanese occupied China. (Please don't steal my plot.)
Therefore your knowledge can be about many subjects but not be the main part of the plot but rather a supporting feature of your story. A romantic story can have so many sources of knowledge. For example, if you know about horses and ranches you could write the love story around that but not be about that.
