Well, theres two reasons for this, depending on the type of girl. One type does this because she's humble or shy. Perhaps she's a bit embarrassed for being recognized or she's surprised you would take the time to notice. The second type would probably have a crush on you. Or at the least, find you attractive. When someone they hold interest in thanks them in any way they become flustered. It's common, especially if you're handsome.

sometimes the body language of boys can be hard to decifer if they are shy...and that is mainly because everyone is so differen't. but here are some general ways you can tell if a "shy guy" is defitnitely interested in you:
1. obviously he will look at you continously... more than your other girl-friends at least. maybe he will look away as soon as you meet eyes rather than prolonging the stare, even though he wants to. if you feel he looks at you more often than not, be sure to make a mental note if he is staring more at your eyes and face than at your body or chest. a sign a guy wants your body more than you is that he will frequently check you out. however, a sign a guy wants you and not just your body will be that he looks at your face and eyes.
2. when you meet eyes, if he looks away EVERY TIME (and super quick) and doesn't look back for a while, he may just be shy with girls in general. but if when you meet eyes he occasionally locks eyes with you for just a second or two, he will smile. guys smile when they are interested, so pay attention to his facial features, and not only where his eyes are.
3. also, and this depends on how much you talk to him (especially during one-on-one convo) or if you're good friends be aware of personal space... if he's standing really close to you and looks at you often but says nothing, he is soo interested. he is also very interested if he touches you (even just briefly) when he's talking or your talking but the convo purpose is not that meaningful...he just does. pay attention if he's touching you and see if he's talking...of just smiling
4. if you're in public together and it's noisy, try talking quiety and wait until he can't hear you. if he pretends to listen, but you know he can't hear, he probably isn't that into you. if he says "WHAT??" he's probably not that into you, but if he leans in closer and you believe he truly cares about what your saying... yes. he is interested in you
