Does gelatin spoil at room temp?
If you are talking about dry gelatin, no - it does not grow microbes.
If you are talking about a gelatin dessert, I believe it would lose its shape and look unappetizing before it would actually spoil. But it is made up of protein, sugar and water, so I would think it could grow microbes.

Why did unflavored gelatin cause your whipped cream to collapse?
Before it sets, gelatin is a liquid. Whipped cream gets its structure from the air you whip into it which is kept in place by the structure of the proteins in the cream. If you add a watery substance, the the bubbles will fill with liquid rather than air which takes up less volume and cause your cream to collapse.
Why do salt water can expand on gelatin?
Salt water can cause gelatin to expand due to the osmotic process. When salt is dissolved in water, it creates a solution with a higher concentration of solutes compared to the gelatin. This difference in concentration causes water to move from the gelatin into the salt water to balance the solute levels, leading to the gelatin absorbing more water and expanding. Additionally, the presence of salt can affect the gelatin's structure, allowing it to hold more water.
Why are most sweets made out of gelatin?
most sweets are made out of gelatin because otherwise they would be made out of whale meat
^^ [edit]
Actually it's probably because gelatin is extremely cheap and easy to get hold of so the alternatives (which are plently) such as Agar-Agar, Biobin, Guar, Xanthan and Carob fruit which have the same effect as gelatin are usually dismissed. This is probably a mistake because if they switched to one of the alternatives, they would make a larger capital due vegetarians and vegans who will buy their produce.

Can Muslims eat bovine gelatin?
sorry. they cant <------ Partially true
I do apologize for the long text but I want to be clear of error when disscussing matters of our Islamic way of life .Thank you
That is partially true. so long it does not contain the flesh of swine. As I have first-hand knowledge of the conumably permissable bovine from a company called Muscle Pharm they supply my training materials, they use flesh from the buffalo. This is allowed by Allah Alamin(creator of mankind&jinn,All that exist).I don't believe that the many companies are in the business of Micro catering to every specific need of the consumers, as that would drive the cost of products to become to high, however the buffalo they use was not mentioned to be slaughterd in the procedure of halal causing it to become Zahbiha (killed in accordance with Islamic instructions),we can eat of the food of the people of the book (Jews/Christians)but not of the flesh of swine.
There may be some confliction so I have included the to main Ayats that speak on the issue,Surah 5 Almaidah Ayat:5 explains that we are allowed to eat the flesh of animals that were not slaughtered according to the islamic proceedure. the other is Surah 5 Almaida Ayat:4
Surah 5 Almaida Ayat:5 This day are all things good and pure made lawful unto you. The food of the people of the book is lawful unto you and your's is lawful unto them.
Surah 5.Almaida Ayat:4 They ask thee O' Muhammad (S.A.W) what is lawful to them (as food):(OMuhammad) say: Lawful unto you are (all) things good and pure:and that ye have taught your trained hunting animals (to catch) in the manner directecd to you by Allah; eat what they catch for you but pronounce the name of Allah over it:and fear Allah;for Allah is swift in taking account.
Surah 5 Ayat 3 forbidden to you (for food) are: dead meat blood the flesh of swine.
There is more to the above ayat text but is pertained to other than this answere.
