Citric acid comes from fruits, mainly... And gluten is found in grain-based products. In the States citric acid is pretty much made from corn.

Yi Yi Ren (Coix), sometimes called "pearl barley", is different from the barley grain that contains the gluten-like proteins problematic for those with celiac sprue. Yi Yi Ren is not believed to be allergenic.
Many people mistakenly believe that these grains are a form of barley, probably because many markets label them as "Asian barley" or "Asian pearl barley." In fact, barley is in an entirely different botanical genus, although the two plants are in the same family. Like barley, Job's tears are dense, rich in minerals, and easy to use in a variety of recipes, so the case of mistaken identity can be forgiven. The plants are also cultivated as ornamentals, incidentally, and Western gardeners may not be aware that the large grains on these grasses are perfectly edible.
Do sunflower seeds contain gluten?
No. It seems that all nuts are seeds, but not all seeds are nuts. In order to be considered a nut, the seed must NOT split along a seam (ie peanuts and sunflower seeds, which are not nuts for this reason).

Are distilled alcohols gluten-free?
Sadly, it depends. Fully distilled alcohols *should* be gluten free, but sometimes part of the mash is added back in for flavor, making the bottled beverage gluten-full. Ditto with some flavored liquor - if it has 'natural flavors', it may be gluteney.
There are a number of places listing liquors that have no gluten, but in
general, you're safe with red wine, most plain rum and tequila. Check with manufacturers for specific info, and you can also buy the gluten test strips to
check things out before you drink.
