What are some ways Jews tried to escape the Nazis Europe?
Some of the top Nazis were given help by the Vatican! See the link below. There were probably many ways for them to get smuggled out of Germany. Some material that I've read said that General Skozeny helped some escape through Italy. He wa, the German general who commanded the special English-speaking commandos who infiltrated the US lines at Battle of Bulge. Supposedly, he had contacts that could smuggle Nazi's out of the coastal port of La Spezia (near Genoa, Italy). I guess from there they made their voyage to Brazile or South America.

Why were the Nazis looking for Jews to kill them?
Answer 1
So they could take their money and valuables to pay for their war. They were attempting to take over Europe. Many of the Aryans of Germany and Austria believed that they would be able to manage Europe far better than the mixed races that were running Europe at the time.
By selecting a class of people who were somewhat isolated from normal society, the Aryans were able to provide an excuse for destroying people who were "different" and at the same time create a common prejudice that has continued among the intellectually challenged to this day. Although many today claim to be "Aryan", or "Neo-Nazi", they usually have no idea of what it's about. Most who subscribe to that form of racism are either quite intellectually inferior or are borderline sociopaths.
It's a little remembered fact that "NAZI" is a German acronym for National Socialists Workers Party. NAZI's were attempting to engineer society through socialism and genocide.
Answer 2
Hitler had a whole book called Mein Kampf that explained exactly why he killed people. The really short abridged version is that he felt that these people were a step backwards in evolution, therefore, they had to be killed. Also, he didnt like morality and he claimed that the Jews brought morality into the world, which he felt should be destroyed.
The proof that it wasn't just political stuff, was during the end of the war he diverted valuable resources to killing Jews, even though they were badly needed at the war front. Historians speculate that if he wouldn't have spent so many resources killing Jews then he would have won the war.

Why was Oskar Schindler able to hide Jews right under the noses of the Nazis?
He didn't exactly "hide" them. In the movie Schindler's List, he starts out wanting to buy an enamelware factory so he can continue his lifestyle of money, wine, and women.
Schindler hires Jews because his account, Stern, tells him, "They're cheaper than Poles." Schindler didn't want to spend a ton of money on workers, but after seeing the ghetto being liquidated (emptied) and the horrible, nauseating treatment Amon Goeth bestows upon the Jews, he begins to find ways to bring as many Jews into his factory as he can.
It's a really great movie, and it really helps you understand the Holocaust from a different point of view. I would suggest it if you're interested.

Only one concentration camp was converted into a death camp, or rather it was expanded and a death camp was added, this was Auschwitz. The death camps that were had served their purpose, they were created to murder those Jews in the ghettos, when this was done, they were dismantled. There was still a need for a killing centre and with good rail connections and access to coal, Auschwitz was a good location.

There are three possible answers that fit like a matroshka doll in that the answers to each should be reiterated in subsequent lists. The answer to this question depends on whether Jew-killing was 1) strictly genocidal attacks on civilians targeted intentionally because they were Jewish 2) could be Jewish Civilians or Jewish soldiers who were killed intentionally because they were Jewish or 3) any conflict or engagement that resulted in killed Jews.
1) Other Jewish genocides, progroms, and attacks against innocent (or politically and militarily inactive Jewish populations) included: the Spanish Inquisition, the Russian Pogroms (like Kishinev), the British Expulsions, the Modern Iraqi and Syrian Pogroms, the post-Algerian Independence Pogroms, the Assyrian Invasions of the Kingdom of Israel and the Kingdom of Judah, the Crusaders' Invasion of Jerusalem, and numerous others.
2) Attacks on both civilian and militant Jews who were targeted on account of their Jewish heritage included: All of the Israeli Engagements, Inter-War Algerian Independence Attacks, Alfred Dreyfus Affair, and several others. The reason that this category is not terribly populated is that Jews did not often have the right to carry weapons.
3) Attacks that resulted in Jewish deaths where Jews were not specifically targeted included: the Mongol Conquest, French Revolution, Russian Revolution, the American Civil War, the Sepoy Mutiny, and numerous others.
