What size wrench would you use for a 58 diameter bolt?

I hope you mean a 5/8 bolt (58 inches would take a machine to turn). Measure your bolt head across the opposing flats. For a 5/8 bolt it may be 1 inch or even larger. The last one I did was in a truck's shock mounting and that took a 1.25 inch socket.

Why use a Torx or Allen wrench?

Torx or Allen wrenches get more torque (pressure) on the bolt.

Why must the work be firmly held when drilling on a drill press?

Because if you don't hold it firmly, or better yet, clamp it, the drill bit may grab it and spin it rapidly causing damage and possible injury.
