Advantages of having two operating systems on a server computer?
None really, unless you're talking about virtualisation, which allows you to run multiple OS'ses simultaneously. The advantage of that, is that you can run some, let's say, Windows XP server applications that won't work on Linux, for example. The disadvantage is that it slows your server down a little, as it has an extra OS to take care of.
But if you're talking about multi-boot, there are no real advantages, because every time you boot one OS, the other stops functioning, and so do the server applications running for that specific OS.
The only advantage I can think of is having a backup OS, when your main OS fails, the server can be fixed easily.. But that's about the only advantage I can think of.
Should I tick programs or system cache under memory usage from control panel system options?
Tick Program option if you are using the machine as a workstation, rather than as a server. Your programs will work faster and your system cache size will be the default size that came with Windows XP. Tick System Cache option if you are using the machine as a server, or if you use programs that require a large system cache.

What is suitable operating system for scientific calculations and multimedia?
Totally different things .... Multimedia : Microsoft Windows 2000 or XP Professional. Windows XP Home is also okay but has lots of bugs than XP Pro. To me Microsoft 2000 Professional is the BEST Operating System Microsoft has ever created ... Scientific Calculations : Depends on what kinds of software applications or tools you run for your scientific calculations. go for Sun Solaris UNIX or Linux Flavours. I Mean Gentoo Linux and Red Hat Linux are the best Linux flavors. I u want both things then Best approach is to have Windows 2000 Professional with SP4 installed as well as either Red Hat Linux (Fedora Core) or Gentoo Linux installed on the same hard-drive with a DUAL Boot mode. I have DUAL Bool with Windows 2000 Pro as well as Fedora Core which is Red Hat Linux version 10.
