Why are pickles are used to store in glass container?
Any object that floats in water is less dense than water (boats are a special case; even when made of materials denser than water, they also enclose large amounts of air, which has a very low density). Although the water molecule is small, they pack close together and form a relatively dense fluid. Larger organic molecules are in many cases less dense because they are not as tightly packed. So, in pickles, there is a certain amount of molecules that are less dense than water.

On the northwest side of Chicago there is a Budlong School, named after the family; and also Budlong Woods, which I believe is part of the Forest Preserve District of Cook County.

A neighbor of mine told of a nearby landing field and a pickle farm. Mather Park now stands where one of them used to be.
My name is Wendy and I am a direct descendant of the Chicago Budlong farmers. I don't have all the facts in front of me right now but my father was Lyman A. Budlong and his father was Joseph Budlong (I believe his name was Joseph) and they were all in Evanston. Joseph Budlong and his father had a farm and they produced Budlong pickles. When I was a kid we visited, in 1961 or so, and you could still find a few old jars of the pickles but by then my grandfather had sold it all to Del Monte or something. Anyway, I don't have all the facts exactly but it was definitely my family and I'd love to get my hands on any Budlong pickle memorabilia if anyone has some they'd like to pass on.
Budlong Pickle Co. also had a pickle "factory" in Mauston, Wisconsin. They bought local cucumbers, sorted them by size and made them in wooden vats. There was a large deck area that went nearly to the top of the vats. The salt was brought in by rail and stored in a building on site. A wheelbarow was used to load salt to the vats when they made a brine. A large wooden cover went over the top while the cukes "worked". As a pre-teen, I used to sell my cucumbers across the street at the pickle factory. It's no longer there but there is still one building left although it doesn't look like it used to. Under the decking was a great place to play hide & seek as a kid. Then again, most places were.

What portions of water and alum do you use in Bread and Butter Pickles?
Alum is such an awful ingredient that it is often not called for in contemporary recipes. For bread & butter pickles, rely on salt to crisp the cucumbers.
For 6 qts of thinly sliced cucs (or zucchini) and 6 med. onions, also sliced, cover in 1/2 c. pickling (or Kosher) salt in a colander.
Bring 1 1/2 qts. white vinegar, 4 1/2 c. sugar, 1/2 c. mustard seed and 1 T. celery seed to a boil.
Pack pint jars w/ cucs, fill to 1/2" of head room, process according to your cooperative extension service guidelines. Makes 12 pts.

Do you use cider vinegar in your pickles?
From a preservation (and safety) standpoint, any commercial vinegar is the same as any other. All must be sold with a minimum of 5% acidity.
The reason to choose Cider vinegar, or any other flavor vinegar, is simply taste. Errr, Taste, and the recipe. Personally, for Bread & Butter pickles, Cider is just fine. But when I use Grandmother Hoskins Salt Dill recipe -- well Cider is to harsh with all that salt. I use a home-made wine vinegar because it is much sweeter.
I recommend taste testing. Mix up a very small test batch, and using different vinegars, taste the brine straight. If it turns out that you like pure distilled white vinegar, then more power to you. If you like 45 year old Aged Italian Balsamic vinegar, then more power to your wallet.
If you mix the two together in a shake they taste like rubber but if you mix orange juice with otherfruits then add in the pickles last the pickle is basically flavorless and if that doesn't wok try it the opposite way
P.S the after taste of just pickles an orange juice taste bad but its tolerable.
