What kind of rice is used to make rice balls?
For the most ridiculously easy rice balls... You need to buy some short grain Sushi rice first. Then follow the instructions on the packet (if you like really sticky rice then add another 1/4 cup of water to it). Put the rice on some glad-wrap, a small amount, about 2 table spoons. Salt the rice and then put in your desired fillings, add another layer of rice on top of that. Gather up the gad wrap adnd twist, while shaping the ball with one hand. Top with seseme seeds and/or nori. Enjoy the rice balls. You can eat them with soy sauce or sweet chilli sauce.
*Hint- if you are very good at making them, after some practise, you can mold them using your hands. The rice is very stcky so definatly put water or salted water or vinegar on your hands first.*

What is the shelf life of dried rice?
----------------------------------------
Leave cooked rice uncovered until it's cooled slightly. Refrigerate in its cooking container and cover when cold. Next day, use a serving spoon to transfer to a freezer bag, separating the grains by applying pressure to the bag, squeezing out all the air and spinning the bag to twist closed. Seal with a plastic tie and refrigerate until needed.
The rice will keep about as long as fresh milk and retain its just-cooked perfection; it's easy to just squeeze servings out of the bag to reheat in microwave or pan or oven. This storage method has the great advantage of reducing handling of the cooked rice.
The flavour of the rice will be as good as when it was cooked; it will stay tender and the grains will remain separate: ideal for making fried rice or for serving with curries and other hot dishes, or using for stuffings.
Store cooked, drained and cooled pasta in the same manner, using tongs to transfer to the bag. Again, it will keep about as long as fresh milk, and the flavour will be unaffected; just microwave it as needed, layer it and bake, or toss it with sauce in a frypan when you're ready. Top with cheese and you've instant pasta dinner!
There are those who don't believe cooked rice and pasta can be stored this way; try it and see for yourself! Provided the initial cooking is done properly, the results will be great.
The keeping qualities of cooked, refrigerated foods depend upon handling and storage; bear this in mind when storing all foods.

How long does dried rice last?
Brown and white rices store very differently. Brown rice is only expected to store for 6 months under average conditions. This is because of the essential fatty acids in brown rice. These oils quickly go rancid as they oxidize. It will store much longer if refrigerated. White rice has the outer shell removed along with those fats. Because of this, white rice isn't nearly as good for you, but will store longer. Hermetically sealed in the absence of oxygen, plan on a storage life for white rice of 8-10 years at a stable temperature of 70 degrees F. It should keep proportionately longer if stored at cooler temperatures. Stored in the absence of oxygen, brown rice will last longer than if it was stored in air. Plan on 1 to 2 years. It is very important to store brown rice as cool as possible, for if you can get the temperature down another ten degrees, it will double the storage life again.
the answer is no.
Edit by Kenneth Williams: Some types of rice will be sticky, you should check the starch content on any rice you buy to see if it is high in starches. High starch rices will be sticky because starch has a gluey texture to it. each individual brand has their own index on starch content so you can not simply just say yes or no. for further assistance check to see how much starch is needed for rice to be sticky. if you don't like sticky rice then put a pinch of salt and a drop of vegetable oil in the pot to keep the rice from sticking together
How much rice can fed 30 people?
Generally, uncooked rice becomes double when cooked (1 cup raw = 2 cups cooked). So to serve 30 people you need to figure out how much cooked rice per person and divide by 30 then divide that by 2 to get the amount needed for the raw rice. In other words, if you want 1/2 cup servings you would take 30 x 1/2 = 15 divided by 2 = 7 1/2 cups raw rice.

I grew rice in Southwest Louisiana for over 26 years. Rice planted in March or April is ready for harvest in July. Could be by the fourth of July depending on the season. The cooler the weather it may take a few days longer to mature. If rice is harvest before August 15 a second crop can be raised by flooding the stubble. This second crop will be harvested sometime in November. The new varieties grow to around 2 feet high. Years ago rice would grow taller and then it would lodge (fall down) if we got high winds and rain.
Thanks to the experiment stations shorter varieties are now produced in prevent lodging. (LSU station in Crowley, La).
