Adjusting your own bindings isn't a bad thing if you know how to do it properly, but since you obviously don't know how to you need to take them to a certified technician, found at all ski shops and sport shops.

The real question is what time of winter. February in general is considered best from a snow point of view. In recent years the amount of snow has lessened due to global warming, and in January you might find that many good slopes are closed. In March, on the other hand, the snow starts melting.

February has its problems too. It's school vacation time, so the slopes are crowded and the lines are long. It's also the height of the season so prices are high and you have to book early.

I recommend the first week of March. By then there is bound to be plenty of snow, and hopefully its still cold enough so that it doesn't start melting.
