They, or more precisely Paul, are credited with composing the score to The Graduate. However, the only original music they provided was Mrs Robinson, which only appeared as an instrumental track and a version so abbreviated it hardly counts in my mind. All of the other S&G songs featured were available on previous albums. Songs composed for the film were rejected and, like the first full version of Mrs Robinson, appeared on their next album, Bookends. Film score composer Dave Grusin provided the original, albeit, incidental music to The Graduate.

Paul was later credited for scoring the film Shampoo, a vehicle for friend Warren Beatty. He also wrote Father & Daughter for the kid's film The Wild Thornberrys. He did not score Disney's Tarzan as suggested elsewhere on here. That was Phil Collins. Me & Julio was used in Disney's Mother Goose Rock n Rhyme

Its probably not the beetles. Depends if your looking for the performers or writers of the songs. I know there's a site called what-song that has a top 10 for artists played in the most in movies. It's still quite new tho and hasn't tallied a lot of movies. But at the moment. The Rolling Stones is #1 on 20 movies. Mozart is 2nd with 18. David Bowie 3rd with 17. Marvin Gaye 4th with 15. Then there's, Bob Dylan, The Beach Boys, The Who, James Brown, Louis Armstrong and Madonna. But yer, generally The Rolling Stones would be accepted as the artist played in the most movies. In part I can answer the question. The song is called 'Symphonie pour un monde étrangé' which means as much as symphony for a strange world, though I prefer the translation symphony for an estranged world. I guess people have to fight out the best translation. Sadly I do not know who composed it, so I hope somebody else can help out with that.

According to the end credits, the theme music was co-composed by Joel Goldsmith, the son of the late TV and movie music composer, Jerry Goldsmith (who composed many of the Star Trek movie music, for example). I can't remember who the other composer was.
