Can you eat chicken that is vacuum sealed but left out overnite?

No. Unless where it was left out was as cold as a refrigerator, it should be discarded.

Can you eat cooked seafood if left out all night in a covered container?

You can eat anything you want; but should you? Absolutely not!

An unrefrigerated, covered container of cooked or uncooked seafood is basically an incubator for salmonella. The food should be thrown out.

Is it safe to freeze pigs liver?

Yes it is. Place the liver in an airtight container. This will prevent any freezer burn from happening to it.

Can ricotta cheese be frozen?

Milk & slice / bulk cheese freezes well, sour cream doesn't. The first two are fine taste & consistency-wise, sour cream was way off on both bases. IMHO I wouldn't think ricotta / cottage cheese would freeze well bc of this.

Can you freeze cooked ham?

You can freeze cooked ham. Here is a good trick. You can slice the ham up into serving slices (or thinner slices for sandwiches) and divide the pieces into packages for several meals or layer the slices with a plastic wrap between them and then take out how ever many you want, without them sticking together. This way you don't have to haul out a big ham and then end up throwing at least 1/4 of it out. If you don't want to do this, wrap the ham in aluminum foil so it doesn't get freezer burn and put a date on it. AND I also forgot. When you take it out get a needle and put vinegar into it. It should make it more tasty!!

You shouldn't really as food is in the danger zone where bacteria can reproduce at a much faster rate. This means its more likely you'll get food poisoning.

Because foods need to be rapidly refrozen to limit the size of ice crystal buildup inside what im assuming is a meat product.

modern frozen foods are flash frozen creating realativly small crystals. most non-commercial freezers wont work for this. they work fine for keeping stuff frozen though :)
