No one can say precisely when a pre-cooked turkey will go bad, but plan to use it up within one month for best flavor.

How long will chick stock keep in a deep freezer?

Chicken stock keeps great in the freezer. In fact you can freeze it in various sized containers so you can thaw and use just the amount you need without thawing a large container when you only need a small amount. Sometimes I even freeze it in ice cube trays and then turn the cubes into a plastic bag. That way I can take out only enough cubes for the amount I need for a recipe.

No longer than an hour or so if left out in room temp. Bacteria can start to grow on foods in an hour. Our stomach acids can kill some of these bacteria but not all. Foods should be kept out of the danger zone which is above 45 degrees and below 145 degrees. In this zone foods are perfect for bacteria.

Does a cooked roast need to be sliced before freezing?

No, it does not have to be sliced. You can put the meat in an air tight container or a freezer bag or freezer paper and freeze. This food will stay good for a year or better.

That's not how you are supposed to thaw any food. Quick-thawed meat is supposed to be cooked right after thawing. There's no way to know whether it is good or not without running lab tests.

Really you can keep food frozen until it dries out, and even longer if you're ok with freezer burned food or it is something you can rehydrate effectively.

Beef tends to toughen the longer you keep it in the freezer, so have that in mind with what you want to use it for.

Hamburgers, for example, are best with the freshest beef you can use, while taco meat, or other dishes where you break up the meat while cooking, is not as bad with old frozen meat.

Is Smoked Meat Cooked or Raw

Q: Dear Jeff, Could you please tell me if the food we smoke is raw or cooked? We have a debate going with friends that the heat of the smoke cooks the meat over a long period of time.Is this correct? Could you please tell me how the smoked meat is cooked?Is it by actual heat or just the heat of the smoke? Our friends feel that any meat, smoked, is raw. Can we feel safe eating this smoked meat, especially pork? Also, why does the meat appear pink when it is smoked? Thanks, Annie

A: There are 2 main types of smoking.. cold smoking and hot smoking. I do not delve into cold smoking for the most part, however I do know that it is smoking at a temperature of 90 degrees or less over a long period of time.

Hot smoking is the type of smoking that I deal with.. it is smoking meat at a temperature of 225 degrees.

The meat is fully cooked to the recommended safe USDA temperature.

The pink look of smoked meat comes from the pigments in the meat being affected chemically by the smoke which keeps the meat from turning to it's cooked color as it normally would.

Hot smoked meats are fully cooked just as they would be in any convection oven or even a crock pot. The only difference is the addition of smoke which flavors the meat based on the type of wood you are using.
