Coconut milk is never used in traditional Japanese food, and in fact is relatively difficult to find except in shops stocking specialty ingredients for foreign dishes, such as SE Asian cooking. Some of the larger supermarkets stock a few cans of coconut milk in their Chinese/SE Asian ingredients sections.
Some Japanese make Thai dishes (particularly green curry) using coconut milk, or Chinese coconut milk and tapioca dessert.
Why does oil heat up faster than milk?
Tap water heats up faster than cooking oil, but cooking oil cools down quicker. We discovered this in doing an experiment that measures cooling rate at 30 second intervals. The experiment was done two days ago, we did two tests and we believe we are acurate. If you would like to try for yourself, heat up the same amount of cooking oil and tap water and time it while it cools. Don't believe everything you hear, but do it yourself!

I would look for 'natural food stores' or 'consumer co-ops' in your area. If that doesn't work try asking an allergy doctor or naturopath (or anyone who practices natural medicine) - they probably have patients that are allergic to cow's milk.
If that doesn't work you might call a local veterinarian or a 4H club in area (a club to help young people learn how to raise animals).

Why is milk opaque and not transparent?
casein (the protein in milk) and the fat molecules deflect and scatter the light particles so they cannot bounce back to your eye from the other side of the glass, instead bouncing off the molecules in the milk and that leads to only being able to see the white milk.
if trypsin (digests protein) is introduced then the casein will break down and the light will not be deflected off it, instead it will travel through the now clearer milk to the other side of the glass and bounce back to your eye.

What are the ethical issues with producing milk?
Most who don't know about lactation and breastfeeding and such think that milking a cow is synonymous with torture and distress, which couldn't be farther from the truth.
However, a lot of people are concerned with how calves are taken away from their mommas a day or two after they are born so that the milk can be fed to humans. These people say (and they are right) that this goes against Mother Nature, that the calves should stay on the cow until they are big and old enough to be weaned, and the milk should be reserved for the calves, not for humans. In Nature, adult wild animals don't drink milk they drink water, so why are humans going against this?
The other concern is the way cows are treated, as they are fed corn (an unnatural diet for cattle), and kept tied up in a stall all day with no much room to move around. Dairy cows are bred to produce milk and hormones are injected or mixed in with the feed so that they produce more milk for the farmer to sell. Cows, being milked "all the time" (they're only milked for 10 months of the year, actually), break down much sooner than beef cows do and have to be sent to slaughter by the time the are around 5 to 6 years of age.
Many people think that farmers are only in it for the money and don't care about the animals, but this really isn't true. If dairy cows were tortured and mistreated, they wouldn't be giving much milk.
