Carrots are among the lowest carbohydrate level of root vegetables, and full of vitamins and nutrients. A diabetic can have them in moderation as part of a balanced diet.

I really doubt it. Consider biting into the bone of a chicken drumstick (and that is cooked so it's even weaker), would it be as easy as biting through a carrot of the same size? The bones in you fingers would be of similar size and therefore strength of the chickens leg. So although you would have the strength to do it, maybe it would be a bit harder than biting through a carrot.
Why is the water green after boil carrots?

Carotene is an orange or red plant pigment found in carrots and many other plant structures. It is a terpenoid hydrocarbon. You are thinking of melanin which reacts with sun to darken our skin, not carotene.

No, they are fine. The carrot is still alive, trying to send out roots to draw in water. You can use a peeler to shave the outer layer off if you want, which might slightly improve the flavor. But they are not bad.
