What is thickness of sub floor needed?

The thickness of subfloor needed generally depends on how far apart your floor joists are located. In most cases, floor joists are 16" center-to-center and the most common thickness of subfloor is 3/4". Some homes will have 1/2". If your floor joists are farther apart, you will need correspondingly thicker subfloor to adequately support weight between the wider joists. Your city's building codes department will be able to specify what you need (some cities may have differing requirements).

Another factor might be the kind of flooring you will install. For carpet, vinyl, laminate, wood and other non-rigid flooring types, the 1/2" or 3/4" will be adequate. For tile, the Tile Institute of America recommends no less than 3/4" subfloor on 16" centers floor joists - but with 1/4" backerboard installed on top of subfloor. Wood is fine for your SUB-floor, but not as the substrate to which you intend to attach the tile. You still need to install a crack isolation membrane or tile backerboard on top of the wood subflooring. It's because wood has too much 'give' and will cause your tiles to track and possibly pop loose. Grout lines will crack and eventually chip out.

How do you remove scotch double sided carpet tape from laminate floors?

First, use a PLASTIC putty knife to scrape off all you can. A hair dryer will warm the tape and soften the glue so it scrapes off easier. Don't use metal or razor blades, as you risk gouging the floor. Then follow up with a product such as Goo-Gone or Lift-Off, or any other mild adhesive remover, with a non-abrasive scrubber pad. Oddly, I've found (by accident) that California Scents air freshener in the aerosol can works better than anything else for removing the sticky adhesive left behind by stickers, tape and labels without damaging the finish underneath. Be cautious of products such as acetone (nail polish remover), because even though they'll remove the sticky residue very well, they'll also dull the finish on your laminate - permanent damage. As with any product, test it first in an inconspicuous area (inside a closet?) before applying to your problem area. And wear appropriate protective gear - goggles, gloves, long sleeves, ventilation, etc. - as indicated on the product label. Then clean up the solvent residue with a mild cleaner on a rag (do NOT spray or pour directly on the floor!), and rub until it's clean and smudge-free. Window cleaners with alcohol work well; they won't smear, and the moisture evaporates quickly to minimize water damage.
