Accessing the Internet via WiFi should be much faster than via 3G. If not, then you probably have WiFi Multimedia (WMM) activated on the WiFi router. This is a Quality of Service (QOS) feature that prioritizes traffic, but for some reason, it severly chokes download speeds to the iPhone (and possibly other mobile devices as well).

To turn it off, log into your wireless router, and look for QOS under the wireless settings. It may be called WMM or 802.11e.

Shut it down and leave it alone for about 5 minutes then turn it back on. It should work. :)

Normally this shouldn't happen. What you can do is right-click on your iPhone when it appears in the left side of the iTunes interface, and click restore from backup. iTunes automatically takes backup of your iPhone before synching it, so it should turn out the way it was before you synched. But like I said, it shouldn't delete your apps when you synch with iTunes.
