Once ITunes store is open, go to podcasts from the left-hand side-bar, selec the podcast that interests you, when you get to the podcast it is similar to downloading music, you can choose to add single episodes or subscribe, by adding an episode, you get just the episode added and by subscribing you will get current episodes and automatically receive future episodes.
