What makes Italian leather the best leather?
The quality of the leather depends more on the quality of the hide than where it was tanned. Italy got a reputation for quality leather becasue it was tanning hides from all over the world. Italian leather does not come from Italian cows.
When new industry regulations came in to force many tanneries all over the world closed down but Italy decided to take on the tanning of the hides. Hides were shipped all over the world to Italy to be tanned so Italy produced some of the best leather but also some of the worst. Quality hides come from places like Sweden, Switzerland etc. and these produce some of the best leather there is. Smaller and more damaged hides come form Argentina and South American countries, these are used to produce lower quality leather.
Many of the Italian companies now produce leather in China rather than Italy.

The 'guardian' vocation is the one your character starts with, and only exists for the intro section, before your character loses their wings and halo, and becomes Minstrel class.
There's no way to 'fix' it per se, because it is not broken. A character only holds that vocation for the intro, as above. If a hacking tool is used to change back to it, then problems will arise, the vocation hasn't been designed to be played for any further part of the game after that. It has no skills, no stat/level progression table, and an action replay simply can't add that in.
