Why is milk heated to make yogurt?

The same reason that cheese and sour cream are preserved: all of these products are made from milk that is mixed with various bacterial cultures. These cultures change the milk into a new product in which fermentation occurs instead of spoiling. Fermentation is also the process that preserves wine where fruit juice would spoil.

The microorganisms that exist in fermented products (sourdough bread dough is another) keep the oxygen cycle working to keep the food fresh. Fermentation is an ancient process used by many cultures world wide to create food that has a longer shelf life. Beer uses this process too, as does sourkraut.

Can you eat yogurt if you have a feeding tube?

It depends on where the tube is placed internally? If it's past the stomach in the intestine, tolerance may be an issue. You might experience diarrhea in this case especially if it's a sugary product.

If the tube goes into the stomach tolerance isn't as much of a concern. Some people use liquid yogurt and syringe it through the tube. You can also blend regular yogurt with milk or water until it is the consistency of regular formula and syringe it in. The key is not to clog the tube, so flushing with water is important.

Some people are allowed to have an oral diet even though they have a feeding tube. So yogurt would be fine. This depends on the individuals medical problem though and would need the OK from a doctor.

Where can one buy a Salton YM9 one quart yogurt maker?

I assume you are talking about the old one that has 6 cups in a line. There are a few types of commercial jams from the grocery that are the same exact size. You are looking for the standard jam canning jar, so if they stock canning supplies that at your grocery or hardware store - you can get them in bulk that way. Buying fancy jam is more fun though.

Also You don't have to have all 6 to run the machine. You could buy a few jams and as you eat through them, add another to your yogurt maker set. I often make plain yogurt and then put a dab of jam on top instead of honey, so it works out well. It is nice to have more than 6 jars too. With at least 7 jars, you will be able to save one jar as a starter and still cook up 6!

If you have the original jars and no lids, go to the pet store and buy the plastic cat food lids, they fit perfect.

I'm not sure exactly what you're asking, but eat it. Make sure it has active bacterial culture in it! Cut up fruit to add to it, put it one some cereal, there are many things you can put in it. Also, some people believe it is good for the skin. People in that area use it as a face mask once in a while, to each their own.

Which brands of yogurt contain gelatin?

No, Stonyfield does not have gelatin in it. I have been a vegetarian for over 15 years, I always check labels. It is safe. Other gelatin free yogurts that come to mind are Chobani Greek yogurt, Silk soy yogurt, Whole Soy yogurt (my favorite soy yogurt, much creamier and tastier than competitors), and there are others but I have forgotten all of them. Always check the labels. Also remember, Kosher gelatin is just as bad as non Kosher gelatin. All gelatin is bad, and comes from animal sources.

When in doubt, email or call the company.

Which brands contain sucralose as a sweetener?

There is a list at

http://www.mercola.com/2000/dec/3/sucralose_products.htm

I don't think it is up to date, however.

Pepsi One and Diet Rite are the only "major" brand of carbonated drink I know about that have sucralose. In 2005 Coke talked about getting something out but I have not seen any of their products without aspartame. Keep looking.

I hope someone else can post a better answer soon, but maybe this helps in the interim.

Coca-Cola has produced a soft drink with Sucralose. It is just called Diet Coke with Splenda(R). It is in my grocery store as of May 26, 2010, but it may be hard to find.

Can yogurt be considered a dessert?

Yoghurt can be served as a dessert or as part of a dessert. Yoghurt could be served where you might otherwise serve ice cream, or with fruit, or a topping.

It can also be served plain or with fruit or topping as a snack.

Yoghurt can also be served as an entrée, as a side, or as part of a main course.

Mixed with cucumber it is frequently served with hot foods such as curries; it is also swirled on top of soups in the way you might use cream, or used in sauces such as curries and casseroles.

Served alone, yoghurt is best presented very cold.

The best type of yoghurt to use is plain yoghurt with no additives. It is very easy and inexpensive to make at home by simply mixing good plain yoghurt with milk and storing it in a temperature-controlled container until it sets. For containers, which aren't expensive, check with your local kitchenware store, or internet food preparation suppliers.
