The shrimp is an invertebrate because it has no backbone. It also has an exoskeleton. (shrimps are very nice to eat btw)

Since Chitin is indigestible (insoluble fiber) I can't imagine it being harmful, as long as the shells are cooked enough to kill any potentially harmful thing the raw creature may have been carrying.

Fan Shrimp are filter feeders. As they have no claws, their appendages end in fine feather like fronds. They use these fronds to collect micro organisms from the water column. Typically they prefer to feed near the filter outlets and intakes where the flow is stronger. It is suggested that driftwood and taller plants be placed near these area in order for the Fan Shrimp to perch and feed. It is also noted that if Fan Shrimp are foraging the substrate for food then they are being inadequately fed. It is advised that, should this be the case, it is possible that they will damage the fronds used to skim the water of the microorganisms. Most, if not all specimens found in the aquarium trade have been wild caught in South East Asia.

the shrimp will absorb the water and it will turn to mush, fall apart and will be too soft.
You can, but it's very easy to overcook them and make them unpleasant to eat. Most recipes call for boiling or sauteing.

Look for a product that removes Skunk odors. You might find it at a sporting goods store. I've forgotten the name but it really works on removing bad odors. The police use it when they find a decomposed body.

No that is not sufficient for an animal. A cat needs more nutrients than just shrimp. You will eventually make your cat sick. Shrimp does not provide a cat with nearly the correct nutrients for it to stay healthy. Cats are carnivores and need MEAT to survive, not fish or shellfish. Find your cat a good quality cat food that has named meat at the first of the ingredient list, which will provide the cat all the nutrients it needs.
