To record a crowd, you want a wide-field mic. It should be omni-directional. This means that it will pick up sound from any direction, not just the person right in front of the mic. Make sure to not mic too close to the crowd, or else one guy will be WAY louder than anyone else. Also, use more than one mic.

You could censor offending words by selecting the area of the word with the mouse and then choosing Edit -> Silence. This will create a blank area in the selected space. This is prefered to deleting the section, as deleting screws up the beat of the song.
