Is baking with coconut oil healthier than butter?
The oils are probably not interchangeable on any dish. They have very different tastes...
Coconut oil is much higher in saturated fats than olive oil. So much higher that it's melting temperature is only76F. Whereas, olive oil has so few saturated fats, that it's melting point is only 21F, lower than that of water.
Being a plant oil, there is no cholesterol, but the high saturated fat content makes it a not so inviting oil to use for regular cooking. If there is a special dish that requires the oil, and it's flavor, I would use it, but not in regular cooking.

Why does coconut oil dont mis with water?
Coconut oil is composed of lipids (fats) which are nonpolar compounds that are not miscible with water, which is polar.
The chemical reason is a bit complex and involves physical chemistry to explain, but in short, nonpolar molecules do not carry much of a partial charge distribution, while polar molecules do. As far as polar and nonpolar compounds go, "like dissolves like" is the general rule and so polar compounds like to stay with polar compounds (this is why water and vinegar will mix) and nonpolar compounds like to stay with nonpolar compounds (mixing oils - although, depending on the density, these may separate with time). A brief chemistry explanation: the association of polar compounds with nonpolar compounds is energetically unfavorable and so these molecules do their best to not associate with each other because it would require an energy input to do so. In general, chemical systems try to stay at the lowest energy level possible and so adding energy to put two molecules together is an energy-involving process, which makes it less favorable and therefore less likely to occur. This is called the "hydrophobic effect".

The freezing point of coconut oil is 25 degrees C, which is about 77 degrees F. which is a nice summer day where I live! Consequently the temperature frequently drops low enough to freeze it. Mustard oil doesn't freeze until minus 80 degrees C, which is minus 112 degrees F. That's colder than the lowest recorded temperature for anywhere permanently inhabited, so it stays liquid in winter. This may be related to the fact that there are more unsaturated compounds in the mustard oil compared to the coconut oil.
